    This is one of my new favorite recipes. My go-to food when I'm feeling poorly and want something healthy and comforting. I don't have a clay pot (I must get one!) so I just preheat a covered casserole dish in the oven and throw the mixture in there for about 15 minutes, until the veggies are just hot and tender. Delicious combination of flavors.
