I made this tonight. It is delicious. I like that it is quick and easy! I used greek yogurt instead of sour cream and I could eat this stuff for breakfast, lunch, and dinner.

The soup comes out bright green and has a wonderful fresh taste to it. I sauteed the onions in the butter until they were soft with a pinch of red pepper flake (to add a touch of heat to the dish and a slice of ham (taken out before pureeing. Next time I might add a bit of garlic and tarragon to round out the flavor even more. This soup is really hearty and yummy, but if you don't like peas this recipe won't make a believer out of you.

If don't like peas, this recipe is not for you. Super simple to make. I carmelized the onions in the butter before adding the stock and the peas. After pureeing, I cooked down until the soup was to the desired thickness. The soup was hearty enough for a cool fall evening. I halved the recipe and had enough soup for 4 servings.
While everything cooked on the stove, I threw a baguette in the oven and made a "clear out the refrigerator" salad.
