This is super duper easy & delicious. I usually have canned tuna in olive oil & anchovies in my pantry, so the mascarpone would be the only thing I'd ever need to by. It takes minutes to make & is open to interpretation. I added a little bit of salt & pepper and some chopped parsley & capers, to dress it up a bit. I'll defintely make this again & would recommend it to anyone who loves the flavor of tuna with anchovies. My guests who said don't like anchovies enjoyed this as well. The tang from the mascarpone is lovely.
