*If leftover risotto is not on hand, add a generous amount of grated Parmigiano cheese and a small amount of tomato sauce to boiled, salted arborio rice.

Grab a handful of leftover risotto and shape it into a 2 1/2-inch diameter ball. Press a hole in the middle with your thumb and place a few cubes of mozzarella cheese inside. Reshape the rice ball, until the mozzarella is fully enclosed in the rice.

In a deep saucepan, heat the extra-virgin olive oil to 350 degrees F.

Roll each rice ball into the beaten egg, and then coat evenly with bread crumbs. Gently place the rice balls in the hot oil without overcrowding. Make sure the olive oil is hot before the rice balls are added; otherwise the rice balls will absorb the oil and become heavy. Fry the rice balls for a few minutes on each side, or until golden. Place the rice balls on the paper towels to absorb any excess oil. Transfer to a plate, and serve them hot or at room temperature.

    I love this simple recipe. It's not anything you would normally find where I live (Hawaii, whether in a restaurant, someone's house or at a party. My coworker friend is Italian and his parents live in Ontario, Canada. His parents would would only allow Italian to be spoken in the house so they're pretty Italian. When his parents visited us they made arancini (put a little cooked potato into the mixture and we fried it up. Absolutely wonderful! Now I'm the only that ever brings a dish like this to a gathering and the guests really love its uniqueness. Molto grazie!

    I have had arancini before and have wanted to make some myself for a long time. While I was watching this episode, I remembered that I had leftover risotto in the fridge. I knew that I wasn't going to eat anymore because the risotto was so heavy. I made it tonight and it was so delicious and light that I easily ate 3 of them and had to make myself stop. It was going to be a side for dinner, but it became dinner and so satisfying.
    One other thing, We just moved and got a package that includes the channel, so I've only been watching for a month. I've noticed that so far none of the dates of the shows are current, I hope it's still running because I LOVE THIS SHOW! I love the fact that it's a cooking, travel, and music show all in one. I so enjoy seeing a piece of life in every show. I'm always disappointed when it's a rerun.
