On a marble worktable stretch and flatten out the dough to about 1/4-inch thick. Place the dough onto a greased baking tray leaving 1/2 of the dough off the pan. Add 1/2 the grapes and squish the grapes with your hands to release the juices into the dough. Sprinkle 1/2 cup sugar and add 1 rosemary sprig. Drizzle the dough with 1 1/2 tablespoons olive oil.
Gently fold over the remaining dough over the grapes and pinch down the ends. Repeat the process using the remaining grapes, sugar, rosemary, and olive oil.
Cook for approximately 20 minutes.

How long you cook the dough depends on what dough you're using. I've found you don't need the sugar because the grapes are sweet enough. Know what tastes great on this? Goat cheese. The tang of the cheese helps cut through the sweetness of the grapes.

I found I had to cook this at least 45 mins. and not 20. I think that's a mistake, because all the other Schiacciata recipes usually have a cook time of about 45 mins. After 35 mins., the edges were done, but the center was still doughy.

I love this recipe with the grapes, I love David Rocco's show. I have one question not having to do with the recipes; I noticed in the scene when everyone was eating, the African men were not eating and drinking, they were sitting at the table as props. Please correct me if I'm wrong. Thank you.
