Place the flour in a shallow bowl or dish. Dredge the beef in the flour, shake off any excess flour, and add the beef to the hot pan. Sear the beef, stirring well so that all sides are browned. Add the sage, thyme (without the stem), and salt, to taste, to the saucepan. Deglaze the pan with the sherry and stir to pick up any brown bits. Once the sherry has reduced, add a couple ladles of vegetable broth and let reduce. Continue stirring and add the chopped chocolate. Once the chocolate has completely melted, add a few more ladles of vegetable broth.
Allow to cook for 1 hour on medium heat, adding more vegetable broth, if necessary.

I have too many good comments; I have to reduce it to a mere 1000 characters, so I'm trying to trim it down.
I used sweet sherry, but, because my husband does not like dark chocolate [I do], I added sweetener, & liked that best.
It was an exotic, salted dark chocolate ganache, with a subtle hint of a mellow rich full bodied cream sherry. H Bristol Cream, It was a win win.

If I could rate this lower than poor, I would. It is beyond a doubt the worst thing I have ever tasted or made. Followed recipe and it was disgusting. A waste of what could otherwise be good food now fit for nothing but the garbage and find something else for dinner. Has anyone actually ever tried this recipe!
