Directions

Heat up the olive oil in a large pot along with the garlic and chile. Add the totani and cook over medium heat about 1 minute, stirring continuously to avoid sticking. Add the wine, tomatoes and potatoes and let cook together another minute. Season with salt, lower the heat and cook, covered, 30 minutes. Finish with the parsley, stir will and serve immediately.

    I Have made this Recepie two different times and I have followed the Recepie and it was FANTASTIC.I was Born in Barletta,Italy on the Adriatic Coast,when I make this dish my Kids in wich they are all Married they want to come over for DINNER.Thank Mr.Rocco.Salutoni dalli Stati Uniti.

    This recipe is FANTASTIC and I make it about twice a month! It is delicate, very light, easy to prepare, and reheats well. I've recently prepared it with a little extra garlic, cannelllini beans, and a pinch of saffron for a little variation. My husband is not a huge fan of calamari and enjoys it too. Thank you David and I look forward to preparing more of your recipes.
