You can substitute dried cranberries if you cannot find pomegranate. Dress the salad right before serving. If you serve it too early, it will get soggy for your guests.

NotesWe like to serve this salad well organized and piled in the center of a large plate. Tuscans do not care about salads too much, we usually have an "Insalata Mista" (mixed greens) so our conscience feels less guilty about the amount of grilled meats we eat with it!
