Ingredients

  • 3 ripe white peaches (about 1 pound), pitted
  • 3 tablespoons superfine sugar (more or less, depending on how sweet the peaches are) 
  • Juice of 1/2 lemon 
  • Prosseco, chilled 

Directions

Add the peaches, sugar, lemon juice and 1/3 cup very cold water to a blender. Puree until smooth, about 1 minute.

Add 1 ounce of the peach puree to the bottom of a champagne glass. Top off the glass with Prosecco. Serve immediately.
