    Outstanding! I made this today, after purchasing orange and yellow beets at a farm. The mandolin does a fine job of cutting paper thin, as directed.
    Cannot wait to make this for guests!

    Loved this salad. I've tried it with gorgonzola and feta now. Delicious both ways

    This salad is delicious. I've also made it using goat cheese instead of gorgonzola, and also with a drizzle of olive oil and honey with fresh black pepper, instead of the dressing. So good!

    Loved the taste of this salad. Next time I would cook the beets a bit first. 20 min. At 400 should do it. Otherwise the slices have to be paper thin!
