    Easy to make, very flavorful and healthy. I used egg substitute and 1 egg to dip the eggplant in but left the rest of the recipe alone. We will definitely do this again.

    Very tasty! I just baked the eggplant with olive oil, then followed the rest of the recipe and it turned out very well!

    I saw the Ciao America show that featured this restaurant and my mouth watered! Not hard to do and absolutely delicious - even the leftovers were great! Thank you for sharing!

    I changed the eggplant by just grilling it brushed with olive oil and then followed the rest of the recipe. It was really good and my husband said it had good flavor, he is Italian and picky. Dorothy Caporusso
