Great healthy recipe. The silken tofu is like silky pudding and blends in well. The texture comes from the edamame and is great. I added and changed a few things to get some flavors that I like. Try it with 1/2 a bunch of cilantro, roasted garlic instead of raw, a couple of roasted jalapenos, and lime juice instead of lemon juice. My husband actually loves this with chips, but a like it with veggies.

I just made this because I'm trying to get more protein in my diet (I'm mostly vegetarian. I found it a bit bland at first so went heavy on the lemon juice and cumin, then added maybe a half chipotle chile with the adobo sauce, which added a nice smoky flavor and a bit of a kick. The texture is great, and I'm still not a huge tofu fan, but you really can't taste the tofu at all. It's delicious!
