I writing this with the bowl containing the remaining 5 servings in front of---it is requiring quite a bit of restraint to not eat the rest!
I had some subs/changes: all wild rice instead of mixed, blood orange instead of reg, shallots instead of red onion, white wine vinegar instead of red. Also didn't cook rice in chicken stock---just plain water with extra salt added to make up for it.
Very beautifully colored dish, light tasting but filling, unusual and amazing flavor combos.

While I new that my daughter would enjoy this, I was pleasantly surprised that both my husband and son did as well. I served this as a side to some seafood kabobs that my son grilled up for us. This was a winner.
