Soba Noodle-Vegetable Salad

This salad is very lightly dressed, so as not to compete with the strong flavors of the Sate's peanut sauce.

I made this as written but added some shredded broccoli stems to the noodles for more crunch and vitamins. I topped it with sesame seeds. This was ok but not a wow. My score is an average of 5 stars for nutrition and ease to make and 3 stars for the overall taste.
