I made this for a party and everyone loved it. Even vegetable haters liked it. It's so fresh and light. I wish Ellie was still coming up with new shows!

Love this recipe! I used quinoa instead of bulgar wheat and increased water to 2 Cups. Left out mint & cumin cause i don't like them. Love how fresh it tastes compared to what i usually buy 'homemade' at a local family-run mediteranean store. My family loves it with some grilled pita bread!

I loved this recipe and so did my Mom. She is 87 years young and still walks 2 miles a day. She is always looking for new recipes that are good for her health. Keep up the good work, Ellie. Please keep giving us good advice and recipes!
