Ingredients

  • 2 cups cooked dried white beans
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon minced shallots
  • 1 teaspoon minced garlic
  • 1 tablespoon finely chopped parsley leaves
  • Salt
  • Freshly ground black pepper

Directions

In a mixing combine all the ingredients together. Mix well. Season with salt and pepper. Cover and let stand for at least 1 hour.
