Ingredients

  • 1 (12-ounce) bottle amber beer (recommended: Abita)
  • 1/2 cup water
  • 2 cloves garlic, chopped
  • 1 shallot, chopped
  • 2 pounds boudin sausage
  • Serving suggestion: Serve the boudin hot with grain mustard

Directions

In a covered saute pan, bring the beer, water, garlic and shallot to a simmer. Add the boudin sausage, cover and simmer for 15 minutes.

Remove the boudin from the poaching liquid and discard the liquid. Serve the boudin hot with grain mustard.
