Directions

Heat an 8-inch nonstick pan over medium heat. When the pan is hot, add the olive oil, zucchini, tomatoes, garlic, salt, and pepper. Toss to combine and saute until the tomatoes give off their juices, 6 to 8 minutes. Serve the dish hot or warm.

    This was really quick, easy and delicious! My husband, who despises tomatoes, even loved it. Great side dish, that I paired with Healthy Appetite with Ellie Krieger's Chicken Parmesan recipe. I would suggest cooking a long-noodle pasta (spaghetti, fettuccine, angel hair, etc. and placing it in the middle of the plate and top half of it with the chicken parmesan and top the other half with the quick ratatouille; then, I would serve a thick bread, like baguette, that has been sliced and topped with butter and garlic. I will make this recipe again and again. Yum!
