    This was really quick, easy and delicious! My husband, who despises tomatoes, even loved it. Great side dish, that I paired with Healthy Appetite with Ellie Krieger's Chicken Parmesan recipe. I would suggest cooking a long-noodle pasta (spaghetti, fettuccine, angel hair, etc. and placing it in the middle of the plate and top half of it with the chicken parmesan and top the other half with the quick ratatouille; then, I would serve a thick bread, like baguette, that has been sliced and topped with butter and garlic. I will make this recipe again and again. Yum!
