Remove the pineapple cups from the freezer and add 1 inch of coconut mixture to each cup. Stick in the ice pop sticks. Put the cups back in the freezer for 3 hours or until frozen. Serve.
Cook's Note: Try other fruits for variety. You can make berry and cream ice pops using strawberries or blueberries; banana and cream ice pops by using mushed up bananas and orange juice; or simply citrus and cream ice pops by using orange juice.
