Julienne the bacon and fry it in a pan until crisp. Drain the bacon on paper towels and set it aside as a garnish. Mince the bunch of chives and set those aside as a garnish as well.
Peel all the cloves from a head of garlic and leave each clove whole. Peel the potatoes and then quarter each one.
In a large pot, add the chicken broth, minced onion, garlic and potatoes and bring this to a rolling boil. Cook the potatoes until tender and then drain the mixture.
In a large bowl, smash the potatoes and garlic together. Mix in the butter and sour cream, and then, continuing to mix, add in the milk until the potatoes reach the desired consistency. Season with salt and pepper.
Place the smashed potatoes in a serving bowl and top with the bacon and chives.
