Directions

Bring a large pot of water to a boil and add some salt. Cook the orzo according to the package directions. Drain and let cool.

In a large bowl, add the orzo, artichokes, olive oil, parsley and capers. Toss until all the ingredients are combined. Season with salt and pepper and serve warm or at room temperature.

    The whole pound of orzo was just fine. I watered the pasta water in advance and didn't need much salt. Especially, since capers have plenty of saltiness to add. 1/2 a cup of oil is about fine since the pasta absorbs it anyway. I added the juice of one lemon (suggested by a reviewer) plus the zest.

    Good. I would say either use 1/2 as much orzo or double the artichokes. Also, it needs to be salted to taste and I added 1/2 cup of lemon juice (we like things lemony) because it didn't have a lot of taste without it. And 1/2 cup of olive oil is way too much. I used about 2 Tbs.
