Meanwhile, in a large bowl combine the eggs, ricotta, and sugar. Using a fork, mix to combine and beat the eggs. Add the milk, orange juice, butter and honey mixture, and bread. Stir to combine. Gently fold in the berries.
Place the ingredients in a 10-inch round (2-quart) baking dish. Cover with plastic wrap and place in the refrigerator for at least 2 hours and up to 12 hours.
Preheat the oven to 350 degrees F. Bake the strata until golden on top and baked through, about 40 minutes. Let stand for 5 minutes before serving. Spoon into dishes and serve.

This was not bad but wasn't my favorite. It is a wonderful thing to do with left over bread and I may do it again so I won't throw the bread away, however, it is not something that I just crave to do again. I used whip cream on it which helped and made it taste better.

I tried this with the family before making it for a large group for brunch. This was easy to make and very tasty! It was sweet, a nice change from regular breakfast sweets. We added this to our recipe book. We will be making this again!

This is sooo good! It came out perfectly fluffy and not too sweet or too moist. Served it cold instead though. Absolutely delicious.
