Directions

Preheat the oven to 325 degrees F.

Combine the butter, powdered sugar, cocoa powder, vanilla, and salt in a large bowl. Using a hand mixer, beat the mixture until creamy, about 2 minutes. Add the flour, pine nuts, and chocolate. Stir until just mixed.

Line 2 baking sheets with parchment paper. Scoop out 1-inch balls of dough. Place on the cookie sheet. Bake until the tops look dry, about 18 minutes. Let cool for 15 minutes on the baking sheets. Dust with powdered sugar and transfer to a serving plate.

love it, the only change I made was the amount of chocolate chips. I put less so they are not too sweat.

Great blend of ingrediants to bring out all of the flavors. My great grandma use to make cookies with pine nuts that were very similar to these!

This is a great recipe for chocolate lovers because the chocolate flavor is full and satisfying. The pine nuts provide a delicate crunch to the light yet sturdy cookies. In my opinion they are best served the day they are made, but they did keep well in my cookie jar for a few days.
