Tasty soup with fresh ingredients. We didn't miss the meat, but a can of drained white beans would make this more filling. Loved that it was a vegetarian dish.

This was surprisingly Awesome! I tweaked a few minor things, I used one veggie & one chicken broth and I only used one artichoke bottle instead of 2 (cut into small pieces and I served it with some garlic/Parmesan bread on the side.
The soup broth is amazing. I think I might try adding some cubed chicken, it might make a nice chicken soup alternative.
It's very filling and I like that it makes alot of soup so I can have it the next day. The best part is that it's super easy and it's healthy.
I'm new to watching this channel so I didn't know her show has ended now :( this is the first recipe of hers I've made and I plan to try alot more! I hope they continue the reruns :

Everything Giada cooks is great! Giada's shows are GREAT! I'm glad I bought several of her wonderful cookbooks. e

This was my first Everyday Italian recipe. Easy to make, healthy and tasty. The most difficult part was figuring-out that Zucchini and Italian Squash are the same vegetable. Sorry to read that Giada is out-of-production, but thanks to CC I have re-runs to hold me for a while.
