They didnt have focaccia bread at the store but I used Italian bread and I'm glad I did! It came out pretty good. Moist and everything. Not too dry, not too moist, it was just right! Not my fav. It was savory but I probably won't repeat. My guests enjoyed it though. : it felt like something was missing though. Maybe I'll add little bits of pancetta and try out how that tastes.

I want to try this one again. The direction "up to four cups" of the bread pieces would be if you were using a HUGE loaf. I should have known it was too much when it was thicker than Thanksgiving dressing when I spooned it in. There was little moisture left, so there was little to pour. I would start with one cup of bread and then see.
