These look intriguing on the show, so I tried them. I found it difficult to form the balls as the dough wanted to fall apart. They also wanted to fall apart when I pushed them into discs. They tasted great, but seemed very dry -- like a savory sandie.

The next time I made them, I added one beaten egg. It made the dough so much easier to work with. The crackers were still a little dry, but they are crackers, after all.

I would recommend this recipe to anyone, they taste amazing.

these crackers are fabulous ! They are more like a cookie, and absolutely delicious plain, with a glass of red wine!My mistake was making these the first time--now everyone requests them, always! I will say they are not easy to make. When you try to form the crackers they fall apart. You just have to keep at each one, roll it, re-roll it, whatever it takes to form it. I find it's easiest to form them into a ball , put them on the baking sheet, and then flatten them out with the palm of your hand. Once you find the method that works for you, you will find they are well worth the effort. Like all Giada's recipes----this one is a keeper!
