Rotini with Salsa di Limone

Ingredients

  • 1 pound rotini pasta
  • 1 1/4 pound Roma tomatoes, seeded and diced
  • 1/4 cup extra-virgin olive oil
  • 1 large lemon, zested and juiced
  • 1 cup crumbled ricotta salata cheese or feta cheese
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta, reserving 1 cup of the pasta water.

Place the hot pasta in a large bowl. Add the tomatoes, olive oil, lemon zest and juice, ricotta salata cheese, salt, pepper, and 1/2 cup of the pasta water. Toss to combine, adding the remaining pasta water, if desired. Serve.

    Not for me. Too much lemon! I have to admit, I usually don't like fruit in my cooking, so this was going outside my comfort zone.

    I loved this recipe, saw Giada make it on her show a while ago. Thought of it again when I just picked a couple of dozen roma tomatoes from the garden. Loved the combination of ingredients also added some lemon basil from the garden. Delicious! Will do it again soon. Kids loved it as well then you know you have a hit!

    I saw this recipe made on Giada's show and decided that it seemed easy and a light meal to make, so I decided to go ahead and try it out. It was super simple with only a few ingredients. I was a little nervous with the lemon flavor, but ended up really liking this meal! The lemon flavor gets balanced out with the olive oil and pasta water, so that you don't get an overpowering taste of lemon. I could only find feta cheese and I will say that it is the perfect cheese for this dish! I will definitely make it again and recommend it to others.
