    Amazing! I used fresh Kale as a substitute instead of baby spinach. Turned out perfect......

    Wow! What a great alternative to the regular meatloaf. Didn't veer away from the recipe at all and had plenty for lunch, 2 days later. Next time I will make more Checca sauce. Serve with an arugula salad.
