I have done this recipe too for 4th of July. In keeping with the spirit of Red, White & Blue, I substituted cantaloupe for honeydew (white...well, sort of : and tossed in a cup of blueberries. The vinaigrette was awesome...but I too added a little extra amaretto. This is such a great side dish and our friends have come to expect it on the buffet line. We'd be in big trouble if we ever decided not to bring it!

I made this recipe for our 4th of July block party. The weather was in the high 90s and this salad was a cool relief. The vinaigrette provided a refreshing coolness of mint and sweet amaretto without masking the watermelon and cantaloupe flavors. I did add more amaretto (about 2 Tbs than was stated in the recipe because I really wanted a bit stronger flavor. I think each cook can adjust this ingredient to taste. I also elected to put this salad into a clear glass bowl to show off the pretty colors and to make tossing easy throughout the party. This recipe is a keeper.
