Place the fish fillets on a baking tray skin side down. Sprinkle the salmon with the sugar, salt and black pepper. Place the dill on the salmon then pour the aquavit over the salmon. Cover and let marinate in the refrigerator for 24 hours. After 12 hours turn the fillets over. The next day remove the marinade from the salmon and thinly slice it.
To Plate: Place slices on a serving tray and garnish the plate with fresh dill and lemon slices.
