Amazing! I am a fast food/eating out junkie and this is one of the first recipes I made after deciding to clean up my diet and I loved them! I even left out the zucchini because I completely forgot them when I went grocery shopping and they were still delicious! Thanks Ellie!!

A delicious recipe. I read the other reviewer's comment about the cooking time. My peppers were perfectly cooked because I used my Mom's trick of sautéing the meat first then adding all of the other ingredients . The result is faster cooking time and the dish perfectly cooked. Thanks Ellie for a great recipe.

I made these stuffed peppers last night for dinner. They were absolutely delicious! Very flavorful. My only complaint is that they took much longer to cook than the recipe stated. I cooked them for the amount of time stated, but when I went to cut mine open, it was still very pink inside. I turned the oven up to 375 and put them in for another fifteen minutes, and they still weren't quite done. Then, I turned the oven up to 400 and cooked them for another ten or fiften minutes. When I cut them open this time, they were still slightly pink, but edible. I just ate them like that, and they were very good, but I wish the recipe had an accurate baking time.
