Heat a heavy-bottomed cast-iron pan. Halve the bananas lengthwise and place cut-side down in the pan. Place the bananas
in a food processor
and puree until smooth.
In a large saucepan set over medium-low heat, add the cream, milk, sugar, syrup and vanilla scrapings. Do not boil.
Place the egg yolks in a large bowl, and whisk together. Slowly add in the heated milk mixture, stirring constantly to temper the egg yolks. Add in the pureed bananas.
Place in ice cream maker and process to desired consistency. Freeze once completed.
