Ingredients

  • 3 (12-ounce) bone-in pork shoulder steaks, about 1-inch thick
  • Kosher salt and freshly ground black pepper
  • 2 cups barbecue sauce, chef's choice (I prefer a sweet tomato-based sauce)

Preheat a charcoal grill to high. Generously sprinkle the pork steaks on both sides with salt and pepper. Cook the steaks over the hot coals for 5 minutes, flip and cook another 5 minutes. Baste with a thick coating of sauce, flip and continue basting and flipping at 5 minute intervals until the steak reaches an internal temperature of 160 degrees F. Remove from the grill and let rest at least 5 minutes prior to serving. Slice and serve with additional sauce on the side.
