Who doesn't love a classic linzer torte filled with raspberry or apricot jam? I call my cookies linzer-esque because they are not quite a tart, not a filled sandwich cookie with a circle cut out on top. Actually they are a riff on another one of my favorite cookies, the hamentashen. Both are filled with jam, buttery and baked at a particular time of the year. This cookie is shaped into a triangle, either way they both have a long history of making people happy.
