ingredients

  • Crushed ice, for serving
  • 2 chunks pineapple, plus 1 slice for garnish
  • 1 lemon wedge
  • 1 orange wedge
  • 2 ounces cognac
  • 3/4 ounce passion fruit syrup (equal parts unsweetened passion fruit juice and demerara sugar or natural brown sugar)
  • 1 dash bitters, such as Peychaud's

Directions

Fill a wine glass with crushed ice and set aside

Muddle the pineapple, lemon and orange in a shaker tin. Add the cognac, passion fruit syrup, bitters and crushed ice. Roll the ingredients between two cocktail tins 4 to 5 times and pour all the contents back into the wine glass. Garnish with a slice of pineapple.
