How to Make Almond Milk

This cholesterol- and lactose-free milk is a sweet alternative for vegans and those avoiding dairy products.

Start with a cup of almonds and a bowl big enough to soak them in.

You can also use washable takeout containers or other plastic storage tins.

After the almonds have soaked for 24 hours, pour out the soaking water and give the almonds a good rinse.

Add the almonds to your blender carafe.

Add two cups of water to the blender.

Blend for two minutes (or less if you have a super-powerful blender).

Strain the mixture through a cheesecloth to separate the bits of almond.

Squeeze the cheesecloth well to extract all the liquid.

Sweeten to taste if desired, and serve chilled or over ice. Store in the refrigerator for up to three days; shake well before drinking, as the milk has a tendency to separate.
