Tortillas: Try buying high-fiber and low-fat tortillas to really fill you up and keep the calorie count down. They're the perfect platform for building tacos or fajitas, and you can even make them into your own tortilla chips!

Cilantro: Cilantro can be a somewhat polarizing ingredient: people tend to either hate it or love it! I think it adds amazing Mexican flavor to anything, so I love to keep some handy.

Shredded Lettuce: A clear essential — who wants to waste time chopping lettuce when you can get it shredded already? It's great for adding an extra fresh crunch to your tacos, or anything else you can think of!

Fat-Free Cheddar Cheese: Yet another essential, fat-free cheddar cheese is low in calories and completely fat free, yet tastes totally indulgent. I use it to stuff my Nacho-rific Stuffed Chicken.

Mexican Spices: Why add fat when you can just add the flavor? Spices like chili powder, cumin and taco seasoning all add terrific flavor without adding any calories at all.

Refried Beans: Refried beans are actually very low in fat — who knew? They even make fat-free refried beans, so feel free to stock up on this. They make a great side dish, and can bulk up tacos, burritos... you name it!

Salsa: As it turns out, salsa is actually America's favorite condiment — it's no longer ketchup, people! One of my personal favorites is black bean and corn salsa, which is low in calories and completely fat free, but adds tons of great flavor and texture to different dishes. I use it in my Shrimp Cocktail Tacos — delicious!

Fat-Free Sour Cream: Last, but certainly not least, there's fat-free sour cream. Add it to dishes to give them an extra bit of creaminess, or use it to cool down the heat in spicier fare. Best of all, it's very low in calories!
