This was delicious, and incredibly easy. I did do a couple of things a tiny bit differently...like instead of using chicken breasts I used a whole chicken, removed the backbone, and flattened it. Additionally, I wanted a little extra heat, so after massaging the skin with olive oil and salting with kosher salt, I sprinkled some crushed red pepper on the skin. I roasted it at 375 for 20 min per lb.
The next day I shredded the leftover chicken and made a pizza with thin sliced jalapeño, sliced mushroom, sliced red onion, cilantro, sambal, and drizzled hoisin sauce. Just used a ready made crust (was lazy, store bought pizza sauce and grated mozzarella cheese. With the ginger and cardamom spiced chicken - it made a delicious, Asian inspired pizza.
