    Love the taste!! I prepare the flour (carb smart tortillas for my husband. (diabetic I love corn tortillas. Always make both. I was raised in very South Texas. Thank you Miss Hoffman for the excellent recipes.

    Very easy and really delish! The flavors all come together so nicley. This recipe is definitely a KEEPER! My husband and 9 year old both really enjoyed it, and already requested it again. I have made many enchiladas in my days and my husband says that this one is his favorite.

    These enchiladas were so good. I did tweek it a bit by adding cojita cheese and green enchiladas sauce! My family loved it! And I think the flour tortillas made the dish and I am Mexican!

    These enchilada's were awesome and "deliciouso". I have made these several times and my family raves about them. Some are made with flour (my preference) and some are made with corn tortillas. Not everyone likes "corn" tortillas, so the reader who "dissed" Ms. Hoffman might take that into account when he insults "Mexicans". My son-in-law is Mexican and he likes flour ones just as well as the corn.

    This recipe is an insult to all Mexicans legal or not. I have never heard of an enchilada made with flour tortillas? That's like a bagel being made out of rice? Come on, publish authentic food not designer food.
