Nacho Cheesy Popcorn

ingredients

  • 2 tablespoons grapeseed oil
  • 3/4 cup unpopped popcorn seeds
  • 1/4 cup coconut oil, melted
  • 1/4 cup nutritional yeast
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • Few shakes hot sauce, optional
  • Cook's Note: For more spice and flavor kick, add cayenne pepper, curry powder or a few shakes of hot sauce to the popcorn.

Directions

Heat the grapeseed oil in a large saucepan or soup pot over medium-high heat. Add the popcorn seeds and place the lid on the pan. Shake vigorously to coat the kernels with oil. When the corn starts to pop, shake the pan constantly until the popping stops, 5 to 7 minutes. Remove from the heat and pour the popped corn into a large mixing bowl.

Drizzle the melted coconut oil over the corn, and sprinkle with nutritional yeast, chili powder, cumin, garlic powder and sea salt. Stir thoroughly and serve with a few shakes of hot sauce, if using.

    Made this to take for a snack at work - everyone wanted to try it and there was barely any left for me! So easy - will make another batch just for me and maybe another batch to share. Even the 'junk food' eaters loved this healthy snack!

    OMG! Best d*mn popcorn I've ever tasted!!! I just went completely plant-based this year so all my snacks are dairy-free/cruelty-free. There are sooo many "other" snacks at my house that my husband and daughter can eat, that I no longer will, but Noooo, they eat all this popcorn before I even put the dirty utensils in the sink! I've made it 3x now and every time it's been a HUGE HIT!!! Girls loved it at my Girls Wine Night In too! I give it a big 5 1/2 Stars!!!

    It actually does taste cheesy and naco-like! A huge hit for the adults and children alike! I used curry powder in lieu of the hot sauce. Very yummy little snack. Makes enough for the whole family.
