Ingredients

  • 2 cups flour
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup (1 stick) butter
  • Two 29-ounce cans peach halves in light syrup, drained
  • 1 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 2 egg yolks
  • 1 cup heavy cream

Directions

Preheat the oven to 400 degrees F. Grease an 11-by-17-inch baking sheet.

In a large bowl, stir together the flour, sugar, salt and baking powder. Using a pastry cutter or your fingers, work the butter into the dry ingredients until it resembles yellow cornmeal. Pour the mixture into the greased baking sheet. Press the dough firmly and evenly into the pan. Arrange the peaches in an even layer on top of the dough. Mix the brown sugar and cinnamon together and sprinkle over the peaches. Bake for 15 minutes, then remove from the oven. Whisk together the eggs and cream, and pour over the peaches. Return the kuchen to the oven and bake for another 30 minutes. Serve warm.
