Combine the sugar, warm water and egg white powder in the bowl of a stand mixer fitted with a whip attachment or a large mixing bowl with a handheld mixer. Beat on low speed just to combine, about 1 minute. Increase the speed to medium-high and beat until thickened and resembling the consistency of honey, 7 to 8 minutes (9 to 10 minutes with a handheld mixer).
Use immediately or store in an airtight container at room temperature for up to 1 day.
