Ingredients

  • 1 1/2 sticks (12 tablespoons) unsalted butter
  • 1 large yellow onion, diced 
  • 1/4 cup balsamic vinegar 
  • 2 tablespoons sugar 
  • Kosher salt and freshly ground black pepper
  • 1 head purple cabbage, halved and shredded

Directions

In a large deep skillet or cast-iron pot, melt the butter and saute the onions, vinegar, sugar and a pinch of salt and pepper until the onions are soft and translucent, about 5 minutes. Add the cabbage to the onion mixture and saute until the cabbage becomes soft and begins to brown, 10 to 12 minutes. Season with salt and pepper to taste.
