I made the pork tacos before and they were such a HUGE family favorite my husband asked for them again for his birthday. He also wanted to try the black bean salsa with it this time so I happily made it for us all to try. It is now another HUGE favorite in our home & blends perfectly with the pork tacos!!! Thank you again Kelsey for this amazing, simple recipe that is so cost effective in this tough economy. We love your recipes & ideas, thank you Kelsey!!!

This salad is delicious, fresh, and light. The combination of flavors bring ordinary ingredients to an exotic level. I did use a whole mango, because I figured it would only make it better. Perfect for a light lunch with a bowl of soup.

I think we've all had some variation of a black bean/corn salad before, but this is SO much better than anything I've ever tried before. The perfect balance of sweet and tart with great texture--I will be making this salad over and over again. I'm so excited to have this recipe!

Wow...this was so easy to make and loaded with flavor. Sweet, spicy, creamy, crunchy, tangy....it is everything you want in a bite of food. I made the slow cooker pork, shredded it and served it over a bed of the black bean salad. I could eat this every week.

Girl can cook! I made this recipe along side the slow cooker pork shoulder. I cooked the shoulder yesterday and made your taco recipe today and I ate an obscene amount; they were so tasty. Every taste bud was represented. Making this salad as opposed to a typical mango salsa was genius. The play of creaminess of the beans against the pork against the crunch of the raw veg, it was rapture true, and I'm out-of-my-mind to save the other half of the pork and rather than make the spring rolls, make these again and have friends over to partake. The perfect party meal where the cook can be free to be part of the action.
I appreciate your straight forward approach mixed with such practical advice. The niche you've chosen completely syncs with who you are and you deliver on your promise of accessibilityapproachability to many cooking levels. Cheers.
