    I tried this recipe for the first time on guests who also experiment on us and it was a huge hit. I sometimes delete the chicken broth for a richer tomato and red pepper flavor and lay the browned chicken in at the very end with the skin side just exposed to keep it from getting rubbery and then complete the cooking. This recipe has even converted my husband who never cared much for chicken!

    Great Dish. Is one of my regulars.
    Cast iron essential is the way to go.
    I cook it in oven for 45 min comes out perfect

    Loved it!!! I substituted chanterelle mushrooms b/c they looked so beautiful at the farmer's market. These mushrooms added deeper flavor to the dish. I added a few mini shitakes too and I added 5 more cloves of garlic to the dish, and doubled the wine. I had crusty bread and rice to go along w/it depending on my guest's preference. Also, I cooked this dish for about 2+ hours...FALL OFF THE BONE GOOD. The perfect dish for winter! So so delicious~I highly recommend it!!

    Another wonderful recipe from Kelsey!
    I saw this particular show on a rainy day & Cacciatore was just the perfect meal for such a day. The addition of wine to this receipe really took it over the top. Delicious, and the house smelled wonderful & inviting.
    Kelsey's shows are SO informative and I find her to be a very good teacher. She's a real inspiration & I look forward to years of watching her & learning from her.
    She's my new Super Hero :)

    Excellent recipe and very easy to follow. Simple ingredients made it easy and clean tasting. HOWEVER, what's up with the 4 teaspoons of oregano? I used 1 tsp of dried oregano just to be safe and it was fine. Also used 1 tsp of dried thyme rather than the 2 teaspoons specified, but probabaly 2 tsp of thyme would have been okay. Served it with rice.
