    Clearly an easy dish. As a friend does not care for mashed (of anything) I just followed the recipe for the fillet. I used baby bellas (no porcini mushrooms available.) I also didn't have a thermometer so I timed it exactly based on Kelsey's show and this recipe. For my friend to use the word "delicious" is an extraordinary compliment. Best pan seared steak I have ever done. And that says a lot as I usually grill my meat. Thanks Kelsey.

    Just made the purée - so airy and fluffy - amazing. Served with short ribs - definitely gives it the "what is this flavor?" factor.

    Love it! My husband prefers chicken so I made it with chicken and steak and it was excellent. Loved the potatoes as well!

    I've cooked for 40 years. Eat steak, year round, grilled. Never pan seared a good piece of meat until now. Had incredible flavor and incredibly easy. And that pan sauce would be great with pork, veal, or an old shoe for that matter.
