    I'm native Coloradan - and have been fortunate enough to devour many Mexican foods - Colorado style -- learned quite a bit from a tavern called "The Brewry Bar" (used to be a 1 & a 11 - believe Brewry Bar 1 is no longer open) - the main difference in the sauce was the addition of pork gravy. I've always made enchilada sauce w/a tomato base BUT have added a packet of Pork Gravy Mix(closest I could come to the sauce served @ the restaurant.) Try it! you'll like how the flavor is enhanced. Also, the onions took precedent over the chiles --- I seldom add any chiles because the onions(use white onion)add soooo much flavor & heat

    This was really tasty. I will admit that I used pre-made tortillas, but that was my only change. The sauce does have a bit of a kick, so it may not be very kid-friendly.
