Peach Salad with Tomatoes, Feta and Basil Vinaigrette

BASIL VINAIGRETTE:
  • 1 teaspoon Dijon mustard
  • 1 small shallot, roughly chopped
  • Kosher salt and cracked black pepper
  • 1 1/2 pounds heirloom tomatoes, roughly chopped
  • 4 to 5 ripe peaches, sliced into wedges
  • 1/2 cup crumbled feta cheese, for garnish

Directions

For the dressing: Combine the basil, olive oil, vinegar, honey, Dijon and shallots in a blender until the dressing emulsifies and the basil is pureed. Season with salt and pepper.

Combine the tomatoes and peaches in a bowl and toss to coat with the dressing. Top with the feta cheese. Serve at room temperature.

    Mmmmmm...made this tonight, using fresh tomatoes and peaches from the farmers market; added some fresh spinach, and changed the feta to blue cheese, just because I love it. The combination was surprisingly amazing...the dressing was the perfect complement! My 17-year-old went back for seconds! Definitely my new favorite summer salad! Thanks!

    I just finished making this salad and it is awesome right now....I know it will be so much better after sitting a while. My only changes were that I had to use red grape tomatoes, and make it a tad bit sweeter for our tastes.....this is a definite keeper and than you, Kelsey.

    This was such a pleasant and surprising salad! I made it with yellow tear drop and red grape tomatoes from the farmers' market and it was as beautiful as it was tasty. I did use mozzarella boconccini instead of feta and rice wine vinegar instead of sherry because I had these things on hand. And as promised on the show, it traveled perfectly to a birthday picnic.
