    We made the variation with Coconut milk and fresh lime juice. I also added chopped red bell pepper and jalapeño to the onion when sautéing before adding the quinoa. LOVED IT! You have to try this. We had it with Alton's recipe for grilled mahi mahi. So good! Oh and we had to add about a half cup of water to get the quinoa to fluff up a little more.
